About Eden Microgreens LLC:

My name is Diana Shelton, I am the owner of Eden Microgreens LLC. My passion is gardening, working in the soil is therapeutic for me as a gardener. My mom became ill with terminal cancer and My sisters suggested I research the nutritional value of microgreens and with the inspiration of the MaryjanesFarm mag. Eat better "feel better" Look better I began my research in the nutritional value of microgreens. Maryjanes article encouraged me to live off the natural soil and live my dreams. Microgreens: Micro greens grow in soil and plenty of sunlight. They are edible vegetables, an immature version of vegetables, herb, seedlings, that are harvested from a week to 2 weeks germination in soil. The raw vegetable seed leaves and stem are all edible. The research from the University of Maryland the US Dept. of agriculture showed in their study micro greens are 4-40% more nutrition than their full grown counterparts. The University of NE Professor Ellen Paparozzi of Hort./Ag. also assisted me with further research from UNH, UF, and Scientific papers on insights into microgreen physiology; all had the same conclusion of their nutritional value although, more research on their phytochemical differences among microgreens is needed. They are added to soups, salads, sandwiches, smoothies and main dishes. Micro greens add a flare to all culinary gourmet dishes. They not only have a beautiful presentation but taste delicious.
