Highlights this Month The Chestnut harvest is over. Lots of refrigerated chestnuts are still available. When chestnuts are first harvested they are all starch and as the chestnuts start to ripen the starch slowly converts to sugar while losing moisture. This process of starch turning to sugar is now happening with our chestnuts. They are quite flavorful. |
