Ingredients
We are located 9 miles northeast of West Point, about 90 minutes north of Omaha. My great-great grandfather homesteaded not too far from here, and we were thrilled to move to Nebraska back in 1998 from California to raise our family. We love it here! rnrnOur family farm uses mainly organic practices, we raise our livestock on pasture, and the poultry feed we mix ourselves. It is made using organic or transitional non-GMO corn, soy meal and oats. We work with very limited quantities of livestock due to our limited space, but this enables us to give more attention to each group of animals.

Practices (our standards for raising or making our products)
Poultry Feed: We can custom mix different rations, with the most popular being broiler and layer rations. It's available in 50# bags, or on the farm in bulk. The main ingredients are organic or transitional non-GMO corn, soy meal, and oats; Fertrell Poultry Nutribalancer (vitamins, minerals, kelp meal, probioitcs), feed-grade limestone for calcium, and for higher-protein mixes, fish meal which contains a natural preservative instead of the more common synthetic preservative.

Order number of halves. We're taking advance reservations for Berkshire pork halves available SPRING 2011.

The Berkshire pork we raise is a specialty breed, highly prized by gourmet chefs and overseas markets for its excellent flavor and marbling. We can attest that it really is different - more flavorful and moist than the standard pork that can be purchased from most places. It does NOT compete with chicken for being "the other white meat"! We currently custom-grow the porkers to order, so if you know you'd like to have a 1/2 hog raised for you, we can do it! (It's really a neat accomplishment to raise 1/2 hogs!) We generally have a spring and fall batch that we raise, but will start additional groups if there is interest. We deliver them to a local processor, and you get all sorts of choices for how you'd like to have the meat packaged. We are happy to help with this process, as it can be intimidating the first time you go through it. Just email me if you'd like additional cost estimates.

Estimated costs are as follows:
100# dressed/hanging weight @$2.50/lb = $250.00
processing cost - $90-$125 This is highly variable based on what processing options you choose. Some of the higher-cost options include curing bacon and ham, sausage links, brats, etc.
Final finished meat weight - est. 70-85#

These hogs are raised on pasture with shelter, and are fed organic grains, as well as our farm surplus milk, produce, etc. Price is $2.50/lb. and is based on Dressed/Hanging weight.

    These peppers aren't tiny: The average size is 4 to 5" long, 2+" wide, and a little under 1/4 lb each. There are 2 peppers per package.
    We use “Gypsy” and red bell peppers the same way, here are several ideas:
  • Chop them up and add to salads.
  • Sauté with onions and put on top of hamburgers.
  • Sauté with onions and eat them plain.
  • Chop up and then freeze (on a cookie sheet to keep them in separate pieces) and use during the winter the same ways as above.
