Mutton is traditionally lamb that is over 2 years old, it is a richer more flavorful meat that is gaining popularity, especially in Europe, and is now seeing more interest in the US. Mutton is in many parts of the world more common than lamb, as lamb is seasonal while mutton is year round and generally less expensive as well. Our butcher did not have labels that said �mutton� so everything says lamb.. but all of this is not a lamb but a young mutton.

Exquisite, high-quality "gourmet" lamb. Our favorite product on the farm. Incredibly tender, and a very mild flavor. Extremely limited quantities; available by advance order, and delivered to processor. Delivery will be by mutual arrangement. Next expected lambs will be ready spring 2011, we estimate. Contact me and I'm happy to review the many custom meat cutting options available. Processing fee is extra - approx. $30. Meat will be $3/lb based on dressed/hanging weight, which will be around 30#-50# per half. Final cut up meat weight is roughly 1/2 the dressed/hanging weight.
