This is a raw milk cheese made only in the spring when the cows are first transitioning back to pasture from their winter ration of hay. The fast growing grasses are full of beta carotene that turns the already golden Jersey milk even more yellow. This is a beautiful cheese inspired by the Dutch \"Grasskaas\" or grass cheese. Young, creamy, and easy to eat, this is a good snacking cheese or stunning addition to a cheese plate.
