Ingredients
Chestnuts: Are Full of Nutrition! High water content and very little oil makes chestnuts virtually fat free. High fiber content makes chestnuts a filling snack. One-third the calorie content of peanuts and cashews! High in complex carbohydrates for energy and are cholesterol free. Contains as much ascorbic acid (vitamin C) as an equal weight of lemons. Nutritionally similar to brown rice � described as "a grain that grows on a tree"

Chestnuts Adds to the Gourmet Flair

There�s much more to chestnuts than roasting on an open fire! You�ll discover a whole new flair in gourmet food when you start preparing the many exciting recipes that feature the chestnut. Chestnuts can be incorporated into a wide range of dishes, from soups and poultry to appetizers, casseroles and pastries.


Practices (our standards for raising or making our products)
The harvest is over. The chestnuts were hand picked every day during the harvest season, cured for two weeks and then refrigerated. No pesticides are used at any time during the growing or harvesting season.

Using a sharp knife cut a X in the outer shell of the chestnut. If using an oven preheat to 425 degrees. Transfer the chestnuts into a baking pan and roast them until tender, about 35 minutes.

Or you may heat chestnuts for 5 minutes in boiling water or heat in a microwave for 1-2 minutes. Remove the shells while the chestnuts are still warm. Cooked chestnuts can be pureed in a food processor.

We like to use the micowave and then season with popcorn salt.

Chestnuts, because of the low fat content are highly perishable. To keep your chestnuts fresh, place in a VENTILATED bag in the crisper of your refrigerator or freeze for later use.

Chestnuts are a starchy vegetable, similar to rice or potatoes. Before you freeze your order, we suggest you freeze a few nuts for a few days, thaw and prepare as you normally would. This will give you an indication if you like the taste after they are frozen. Some people like the taste, some don't. We suggest you judge for yourself.

Add Chestnuts salads or just eat for snacking.



Highlights this Month
The Chestnut harvest is over and the nuts are being cured and the refrigerated. When Chestnuts are first harvested they are all starch and as the chestnuts start to ripen the starch slowly converts to sugar while losing moisture. This process of starch turning to sugar is now happening with our chestnuts. They are quite flavorful.
