beef, lamb, pork About Us Marcy graduated from University Nebraska in 1997 and I (JR) graduated from University Nebraska Wesleyan in 1996. We met in college and got married in 1996 and live on the original Hollenbeck farmstead that originated in 1896. Our kids Emily (8), Olivia (6) and Ethan (4) are the fifth generation to grow up on this 80 acre farm. We have raised cattle and farmed all our lives. We sold breeding /seed stock , some quarters and halves before starting to retail our meat in 2006. We got our own label and began retailing our meat through farmers markets and local family owned grocery stores in Lincoln and Omaha. In 2007 we introduced our meats to restaurants and this year started delivering directly to customers� residence and joined the Nebraska Food Coop. Browse through our Products for Sale Additional Information Our cattle are all born, bred and raised on our farm in Elmwood, Nebraska. We are conveniently located between Lincoln and Omaha which is a big advantage to us to help provide fresh products to the two metro areas that are minutes away. The cattle are free ranged grazed in our pastures for about five months. They are then weaned from their mothers and have access to a self feeder, which means they can eat grain whenever they want. This is different than the conventional way of feeding cattle where they are placed in a feedlot and fed once or twice a day. Our calves have ample access to feed, roam, drink or sleep 24 hours a day. The calves are not given antibiotics, hormones/steroids or fed animal bi-products. We use a certification program that collects data on the breed history and the veterinary care of every animal. The highest safety and quality standards as well as strict animal welfare are used to closely monitor our cattle. There is the rare occasion that arises when a calf gets sick and has to be administered antibiotic or the animal would die. This usually happens in the winter months during extreme cold when calves will sometimes develop pneumonia. These animals are not considered to be of our quality standard and are never sold by the �Hollenbeck Farms� label name. Artificially breeding our cattle is an aspect of our business that we feel sets us apart from competition. Artificial breeding means instead of using a bull to service the cows we buy frozen semen and hand breed each of our cows. This is a way that we are able to deliver a superior quality by selecting desired genetics. Another advantage to artificially breeding is that we can avoid exposing our cattle to diseases that a particular bull may be caring. This is a very time consuming and expensive process, but this resource enables us to access the best genetics in the world. We select bulls who have high carcass traits which combined with the sustainable agriculture practices we have in place, give our customer a superior product. We take all beef, lamb and pork to C & C Processing, a family owned processing facility in Diller, NE. The processing plant is not only state inspected but federally inspected by the USDA. There is a USDA inspector on sight whenever our animals are processed. All of our meat is vacuumed packaged to ensure freshness. We take great pride in raising the finest quality, most healthy and wholesome meat available.
