Berkshire Pork Halves - Advance Reservation Order number of halves. We're taking advance reservations for Berkshire pork halves available SPRING 2011. The Berkshire pork we raise is a specialty breed, highly prized by gourmet chefs and overseas markets for its excellent flavor and marbling. We can attest that it really is different - more flavorful and moist than the standard pork that can be purchased from most places. It does NOT compete with chicken for being "the other white meat"! We currently custom-grow the porkers to order, so if you know you'd like to have a 1/2 hog raised for you, we can do it! (It's really a neat accomplishment to raise 1/2 hogs!) We generally have a spring and fall batch that we raise, but will start additional groups if there is interest. We deliver them to a local processor, and you get all sorts of choices for how you'd like to have the meat packaged. We are happy to help with this process, as it can be intimidating the first time you go through it. Just email me if you'd like additional cost estimates. Estimated costs are as follows: 100# dressed/hanging weight @$2.50/lb = $250.00 processing cost - $90-$125 This is highly variable based on what processing options you choose.
