Order is currently closed	#1005	Austrian Crescent Fingerling Potatoes Order number of pounds. Austrian Crescent Fingerlings are easy to prepare. Fingerlings taste great roasted, steamed, grilled, fried, sautéed, or boiled. They hold up well, and look great on the plate. Use garden grown fingerling shaped potatoes to take advantage of cooking the tubers whole and with the skin, which adds additional nutrients. This potato has a creamy, (butter-kissed flavor) light yellow inside, and a smooth textured tan outside. Potatoes are an excellent source of fiber and a high in potassium, vitamin C, copper, folic acid, magnesium, and iron. Cold potato salad made with vinaigrette dressing, stored overnight in the fridge, is by far the healthiest way to eat potatoes. Chilling will increase the potatoes' resistant starch content, the acid in the vinaigrette, (citrus juice or vinegar), slows your digestion, allowing your stomach to more completely process the vegetables. This combination of cooled starch and acidic dressing results in a lower glycemic spike, which is healthier for your body. Italian Potato Salad (usually includes green beans and tomato). Ingredients: 2 pounds of the tubers cut into chunks or slices, 1 cup diced fresh tomato 1 cup steamed green beans 1/2 cup of olive oil ¼ cup red vinegar 1 tbsp. chopped fresh parsley 1 tsp. Italian Seasonings Dash of red pepper flakes 1 clove of chopped garlic (optional) Boil potatoes with the skins for about 20 minutes to preserve most of the nutritional value. Add oil, vinegar, parsley, Italian seasoning, garlic, red pepper flakes, and salt and pepper to bowl and whisk. Add the tomatoes, green beans, and potatoes to mixture. For additional flavor, add capers and olives, plus fresh chopped parsley. A great addition could be a small can of tuna fish, or any other cooked fish leftovers, including shrimp or whitefish. Another idea: Italian Fries Take some of these home, rinse, pat dry and leave whole on a baking sheet, or slice into coin-size pieces. Preheat the oven to 400°F. In a large bowl, combine the cut potatoes, olive oil, salt, and pepper.Toss well to coat. Arrange the potatoes in a single layer on a baking sheet. Cover with aluminum foil and cook the potatoes in the oven for 15 minutes.
