Rendering your own lard is so easy! All you have to do is that this "roast" and place it in a large baking dish. Place in 250 degree oven for several hours. It will liquify... pour or ladle out fat into jars and leave on counter to cool. You should get about 2 jars of lard.. your first jar will be snow white and second on will be more light amber in color. The white lard has no pork flavor and is great for baking.. the darker lard has wonderful pork flavor which is excellent for frying/roasting with. When all the lard is melted you are left with crunchies... a favorite treat in my house.. just add some salt and much away! YUM! Our pigs are raised outdoors on rotational pasture. We supplement with organic soy-free grains, fresh milk from our grass-fed jersey cows, and occasionally whey. We follow organic practices on our land and with our animals.
