Whole head weighs approximately 13.5 pounds. Heart and Tongue included. Cook with onions and salt. Remove cooked meat from bone, grind and add oatmeal and strained liquid from cooking. Sets up in loaf pans. When it's cool, slice thin and fry it in a little oil. It freezes well. One batch will make approximately 8 loaf pans. It IS really good!
